VEGAN STREET TACOS

Today, we're cooking our very own Vegan Street Tacos. These aren't just any tacos; they are a bold testament to the power of plant-based goodness, packed with spiced Beyond Beef, earthy mushrooms, crisp green peppers, and the perfect hint of onions. So, tie on that apron, fire up the stove, and let the sizzle of the saucepan serenade you. Let's turn the ordinary into extraordinary. Let’s get busy!

Serves – 6

INGREDIENTS

  • 1 lb Beyond Beef

  • ½ cup mushrooms – chopped

  • 1/3 cup onions – diced

  • 1/3 cup green peppers – diced

  • 2 tbsp olive oil

  • 1 tbsp garlic powder

  • 2 tbsp ancho chili powder

  • 2 tbsp cumin

INSTRUCTIONS

  1. In a large saucepan over medium-high heat, add oil. Once heated, add onions and peppers and cook for 5 minutes, stirring occasionally.

  2. Stir in mushrooms and cook for 3-4 minutes. Mix in the Beyond Beef, cumin, garlic powder, and chili powder.

  3. Lower the heat, mix well, and cook for another 4-5 minutes. Remove from heat.

Serve approximately 2 ounces of the mixture in a street-size tortilla soft shell, topped with your favorite condiments.
